I can't seem to find where I can pick the trap and venue for uk greyhounds
You can use "Market conditions->Racing - Venues filter" to allow strategy to bet only at specific venue.
To bet on specific trap you should use "Selection conditions->Bet type by runner position" rule and set it like explained in following help article:
