How many bets can the bot cope with on 1 race? I have a few systems with "in running" betting and it seems to be struggling?

There is no limit on number of bets.
Maybe you have some other problems. Please post screenshots and explain why do you think that bot is struggling.

I bet to win on my selection(30 seconds before the start) then i have 5 systems which lay the horse to generate the following profit
10%
25%
50%
75%
100%
when the race starts the lay side of the bets are not live on my betfair account until after the race has started sometimes the race is well in progress.

Your trade out bets are only placed when initial bet is matched. That is probably causing delay here, as second Lay bet will not be placed until first bet is matched.
If you believe that there is a problem and that this is not working well then please post screenshots of placed bets form bot BETS history, their placed and matched bets times.
Also post screenshots of Tools&Settings->Monitoring settings to check those too.
